  • Coushatta Casino Resort Unveils Newly Reimagined Big Sky Steakhouse

Reservations are now available for dining beginning August 4. Kinder, LA Coushatta Casino Resort announces the highly anticipated grand reopening of its Big Sky Steakhouse on Monday, August 4. Big Sky Steakhouse, a beloved regional favorite for over 30 years, reopens with a complete renovation inspired by the Acadian region of Southwest Louisiana. “Our goal was to bring the best of Louisiana to a steakhouse setting,” said Chef Matthew Beard. “I grew up in this region and have a strong connection to the area, which is why leading the team at Big Sky Steakhouse is deeply personal to me. Our custom cuts, dry-aging process and commitment to Louisiana flavors make every dish stand out.” Chef Beard, a native of Oberlin, trained at Le Cordon Bleu College of Culinary Arts in Austin, Texas, and at the Le Cordon Bleu in Scottsdale, Arizona. Known for introducing inventive food concepts across the Coushatta property, he brings both culinary artistry and hometown pride to Big Sky’s kitchen. The updated menu, inspired by the storied culinary traditions of the surrounding parishes, features prime dry-aged cuts like the 24oz Cowboy Cut Bone-In Ribeye, Gulf seafood including pan-seared black drum and Red Snapper Calcasieu, and classic Louisiana dishes such as oxtail gravy over buttery mashed potatoes. Standout house favorites include fried green tomatoes with lump crabmeat and crawfish (harvested from Coushatta’s own farms), and the Big Sky Burger, crafted from dry-aged beef. The re-imagined restaurant space pays tribute to the region. Inside, guests will find a welcoming space rooted in Acadian design: repurposed 150-year-old doors, locally crafted woodwork, curated antiques and custom lighting. The new layout includes cozy booths for intimate dinners and a spacious dining room anchored by a grand fireplace. Much of the finish-out was completed by local tradespeople and artisans. The art throughout the space, was handpicked from the Louisiana area, including several pieces by New Orleans-based fine art photographer Frank Relle. The new Mirror Bar serves as a dazzling focal point in the new space. The back bar features over 40 antique mirrors, each carefully sourced from across the South. The Mirror Bar offers the full dining menu along with craft cocktails like the Smoked Old Fashioned (accented with oak smoke) and the dramatic Voodoo Smoked Tiki Dreams, featuring layered rums, smoked bubbles, and a flaming garnish. Local pastry chef Kellie Trimble-Deaire brings her own Louisiana flair to the dessert menu, incorporating flavors like chicory, praline and rum. Signature sweets include Salted Caramel Mini Beignets and Bananas Foster Bread Pudding. Big Sky’s dining room seats 120 and the Mirror Bar seats 42. A private chef’s table, featuring a 2,230 year old Sinker Cypress antique table, offers a personalized experience for up to eight adventurous diners. The private dining room, accented with local art and custom millwork, seats larger groups up to 20. • Style on the Green

Men’s golf attire has evolved significantly from the 19th century to today. In the 19th century, golfers wore formal and restrictive clothing, such as tweed jackets, waistcoats, high-collared shirts, and knickerbockers (knee-length trousers) paired with wool socks. Flat caps or bowler hats provided sun protection, while leather shoes with hobnails offered grip. Although stylish, this attire prioritized etiquette over comfort. In the early 20th century, men’s golf fashion became more practical. The 1920s embraced a relaxed yet elegant style with high-waisted, wide-legged trousers (Oxford bags) and single- or double-breasted jackets. Knitted sweaters, cardigan vests, and plus-fours gained popularity, while dress shirts with detachable collars, patterned ties, fedora hats, and two-tone Oxford shoes contributed to a refined yet comfortable look. By the 1970s, golf attire became more colorful and expressive. Polyester polo shirts, plaid pants, and wide-legged trousers were common, while knit vests, windbreakers, and belted shorts provided flexibility. Athletic-style golf shoes with spiked soles improved traction, and caps or visors became standard accessories. Today, men’s golf fashion blends style and performance. Moisture-wicking fabrics, breathable materials, and tailored fits enhance comfort and mobility while maintaining a polished, professional look. Polo shirts in a variety of colors and patterns are paired with tailored shorts or pants for a modern, athletic fit. Spikeless golf shoes offer traction, and accessories like caps or visors provide sun protection. The focus is on functionality, ensuring that golf attire is not only stylish but also enhances performance on the course.

  • Traverse City, Michigan

From runway to fairway in less than an hour is the theme for 2025 golf in the Traverse City Golf Capital of Northern Michigan and especially the spectacular Grand Traverse Resort and Spa. With non-stop flights on American Airlines from Dallas/Fort Worth and now United Airlines from Houston, the ease of travel and great golf in cool summertime temperatures is easier than ever for Lone Star linksters looking to escape the summer heat. “It has been exciting to see golfers from all over the country come to Traverse City through these non-stop flights. For golfers to be able to land at Cherry Capital Airport, use our complimentary Resort shuttle, and be on a tee box in less than an hour is incredible,” said Caroline Rizzo from the landmark Grand Traverse Resort. “It’s great to give travelers that opportunity to enjoy a seamless journey from their starting destination to Traverse City, over to the Resort and onto one of our three championship courses. We are less than 10 minutes from the airport so we mean it when we say within a half hour of landing you could be from the runway to the fairway.” While the North Texas non-stop flights have been going for a few years, this is the second season for Houston to offer the same plan for Southeast Texas golfers, starting in June and continuing through the prime golf season. “I would say the sweet spot is end of June through mid-October. You get the long days at the beginning of summer and then incredibl fall golf in September and October. Fall in Michigan is beautiful – perfect weather, rich colors, and smaller crowds,” added Grand Traverse’s Steve Timmer. Once you arrive here, you’re in the cool area and even cooler golf with three outstanding golf courses to begin your Northern Michigan journey. “I mean, it starts with The Bear,” said Timmer. “The Bear is kind of our most famous course. It was Jack Nicklaus’ first course in the state of Michigan back in 1985.” “The Bear is tough golf. It’s what most people come to the Resort to play. We also have The Wolverine, a Gary Player design and our most playable course with distinct front and back nines. Spruce Run dates to when we were just getting started. It started as the Acme Public Course and was redesigned by William Newcomb. It is tree-lined and wraps around the Hotel.” All three courses are located on the Resort’s 900-acre property and start and end. This one-stop-shop golf resort allows for convenience and maximum golf during Michigan’s long summer days. “That’s the great thing about where we are geographically, we have long days in the summer with sunlight for nearly 15 hours some days,” says Timmer. “We do a promotion called ‘Golf Your Day lights Out’ which allows golfers to play as much golf as they can fit in a day for one price. It’s a week-long promotion during Summer Solstice and you’ll see golfers out from 5:45 in the morning until almost 10 at night,” said Timmer. Of course, the longer time in the day to play golf is one thing, the temperatures to want to do it is another. “It starts with the weather for sure. You can’t beat summer in northern Michigan. From the golf courses to the inland lakes and bays, plus the wineries and trails. There’s so much to see and explore,” added Timmer. “You have Pure Michigan golf courses everywhere; a plethora of nationally acclaimed golf courses. It just really helps with our golf community and leveraging our beautiful asset that we have in this community,” said Autumn MacClare with the Cherry Capital Traverse City Airport. They have been working hard to bring more golfers to the area and now have almost two dozen non-stop flights from all over the country, and most important, they’re bringing Texas golfers closer and with ease to the destination. “It’s been a phenomenal boost to get those flights here. Good things take time and I know that Texas airports and our airlines were working hard to get those routes, with Dallas and American Airlines first and then the success of Houston with United Airlines. There were only 14 seats that went unsold last season last summer,” said MacClaren. Of course, playing the great courses at Grand Traverse is one thing, but you need to eat, sleep and relax when golf is done. That’s where the 500-room, multi- story Grand Traverse Resort comes in nicely. “We have 500 guest rooms which allows us to welcome multiple golf groups at a time, large conferences that want to include a golf outing for their attendees, and more. Golf groups are extremely popular. They are coming from all over the country and booking years in advance,” said Rizzo. “We are lucky to have three courses on property. That keeps things entertaining and different each day for the dozens of golf groups we host every year.” When you add the dining options, spa, lounges, even a casino right down the road, golf is far from the only attraction which keeps the Grand Traverse Resort booming all summer long. “Every year has been a new record year for us since 2020 in terms of golf. The cool thing for us is those numbers come from Resort guests, people who live here locally, or those staying in other areas of Traverse City that want to come over and experience our courses,” said Timmer. “We’re getting a lot of outside play like I said really record-setting for the game of golf itself is doing really well in Northern Michigan.” Fairway to Runway has never been easier for a 2025 vacation to remember in Northern Michigan and at Grand Traverse Resort and Spa.

Unforgettable Moments at Hazeltine: A New Amateur Champion Emerges The 2024 US amateur championship concluded Sunday at Hazeltine, a course that has seen many legendary Sunday finishes like the KPMG Women’s PGA Championship in 2019 or the Ryder Cup in 2016, and of course, how could we forget the legendary duel between Tiger and Rich Beem in 2002. This week an amateur wrote his name in the record books at this historic course, Jose Luis Ballester became the first from Spain to win the US Amateur. Not only did he win, he did it against one of the strongest fields in the world with a World Amateur Golf Ranking (WAGR) event rating of 996.2581 to add context the average event holds around a 20-35 rating on WAGR. So how did he do it? By doing what we are always told to do in match play "try and make pars." In the championship match, he won 5 holes by just making par. He stayed patient and let his opponent make mistakes while seizing the opportunities when he had them. This coupled with his good deminer, and pro-level course management helped put the Sundevil over the top. This event gives us a glimpse of the future of the college golf world where almost half of the best amateurs are from outside of the USA. 24 of the 50 best amateurs in the world are from other countries. This new wave of young golfers will come from all over the world. College coaches seem to be the first to notice this, as the number of international golfers in the NCAA has seen an upward trend. With Jose Luis Ballester’s victory this week a whole new wave of Spaniards has been motivated to take on the game of golf and as more internationals write their name in the history books a plethora of motivated kids shall follow them to the college golf level.
